Grilled Sausage and Veggies

  • 14oz Klement’s Italian Sausage
  • 1 medium onion, cut into wedges
  • 1 cup mushrooms, quartered
  • 1 medium zucchini, cut into 1" slices
  • 1 medium red pepper, ribs and seeds removed, thinly sliced
  • 1 medium yellow summer squash, cut into 1" slices
  • 1/4 cup olive oil
  • 1 Tbsp dried oregano
  • 1 Tbsp dried parsley flakes
  • 1 Tbsp garlic salt
  • 1 Tbsp paprika
  • In a large bowl, combine sausage, onion, mushrooms, zucchini, red pepper, and yellow summer squash. Combine oil, oregano, parsley, garlic salt and paprika in a smaller bowl. Pour smaller bowl into sausage mixture; toss and coat. Divide between two pieces of heavy-duty foil. Fold foil around sausage mixture and seal edges tightly.
  • Grill, covered, over medium heat for 25-30 minutes, or until sausage is no longer pink. Open foil carefully to allow steam to escape.
