Italian Style Provolone Loaves

  • 1lb Sliced Klement's Beef Summer Sausage
  • 4 French sandwich loaves
  • 1/4 Cup olive oil
  • 1 tbsp red wine vinegar
  • 2 Tomatoes, peeled, thinly sliced
  • 1 Medium cucumber, thinly sliced
  • 1 Medium onion, sliced, separated into rings
  • 3 tbsp chopped fresh parsley
  • 1/2 tsp dried basil leaves
  • 1/4 tsp black pepper
  • 1 Clove garlic, minced
  • With knife, slice loaves in half lengthwise. Using about 1 tablespoon of the oil, brush each cut side of loaves.
  • Combine remaining oil and vinegar and set aside.
  • Arrange 1/4 of the tomato on each bottom half and brush with half the vinegar mixture.
  • Arrange 1/4 of the cucumber, cheese, summer sausage, and onion over tomatoes on each half.
  • Brush with the remaining vinegar mixture.
  • In small bowl, combine parsley, basil, black pepper, and garlic. Sprinkle over vegetables.
  • Cover each with top half of loaf and secure with toothpicks, if necessary.
  • Wrap in plastic wrap.
  • Let stand at room temperature 30-60 minutes before serving. Refrigerate if held longer than 60 minutes.
