Roasted Kielbasa and Vegetables

  • 1. Preheat oven to 400 degrees.
  • 2. Divide all vegetables onto two greased baking pans. 
  • 3. Drizzle with oil, toss to coat.
  • 4. Roast 25 minutes, stirring occasionally.
  • 5. Add the kielbasa with salt and pepper to the pans.
  • 6. Roast another 15-20 minutes longer or until vegetables are tender.
  • 7. Transfer to a serving bowl; toss to combine.
  • 8. Serve and enjoy!
