Roasted Kielbasa and Vegetables

  • Preheat oven to 400 degrees.
  • Divide all vegetables onto two greased baking pans. 
  • Dizzle with oil, toss to coat.
  • Roast 25 minutes, stirring occasionally.
  • Add the kielbasa with salt and pepper to the pans.
  • Roast another 15-20 minutes longer or until vegetables are tender.
  • Transfer to a serving bowl; toss to combine.
  • Serve and enjoy!
