Sausage and Egg Scrambler

  • 1 package 14oz. Smoked Bratwurst
  • 6 large eggs, beaten
  • 1 tsp. Cajun seasoning
  • 2 tbsp. Olive Oil
  • 1 small Potato, diced
  • 1 small onion, chopped
  • 1 medium green pepper, chopped
  • 1/2 cup Pepper Jack cheese
  • Brown sausage in skillet and cut into coin sized pieces
  • In a medium bowl, whisk together eggs and Cajun seasoning.
  • In a large non-stick skillet over medium heat, add olive oil, potato, onion and green pepper. Fry up into tender.
  • Pour eggs over the sausage and vegtable mixture. Fold the mix until eggs are cooked through.
  • Spinkle Pepper Jack cheese over the egg, sausage and vegtable mixture.
  • Serve and enjoy.
