Summer Sausage Farfalle

  • 1 (12 oz) Original Summer Sausage, sliced and quartered
  • 1/2 pint cherry or grape tomatoes; halved
  • 1/2 onion; diced
  • 1 yellow bell pepper; diced
  • 1 zucchini; sliced and quartered
  • 3 garlic cloves; minced
  • 1 Tbsp. extra virgin olive oil
  • 1/8 tsp salt and pepper
  • 1/2 tsp Italian Seasoning
  • 1 (15oz) can of chicken broth
  • 1/2 cup grated parmesan cheese
  • 1 cup heavy whipping cream
  • 2 Tbsp Flour
  • 1/8 tsp Black pepper
  • 1lb farfalle pasta
  • Cook the pasta according to the package; drain adn rinse in cold water.
  • In large saute pan, sear the summer sauasge on both sides. Remove and set aside.
  • In another pan, heat olive oil over medium heat.
  • Add all vegtables, garlic and salt and pepper. Saute them for 4-6 minutes or until they have softened.
  • Add the italian seasoning to vegtables and mix.
  • Return meat to the pan and combine with vegtables.


  • In a sauce pan, whisk together the flour and about 1/4 cup of the chicken broth unti smooth.
  • Once it si smooth, add the remaining broth and slowly whisk in the parmesan cheese.
  • After the cheese and broth are combined, add in the cream and continue to whisk together, add the black pepper.
  • Combine the pasta, meat and vegtables and sauce and mix well.
  • Serve and enjoy!
