Sausage and Egg Sweet Potato Hash

  • 1. Preheat oven to 425 degrees F. 
  • 2. In the cast iron skillet over medium heat, add olive oil. Saute onions and bell pepper until tender. Add garlic and stir about one minute. Place mixture in a bowl or plate to the side. 
  • 3. In the same skillet, add chopped sweet potatoes and cook, stirring occasionally, until tender (about 10 minutes).
  • 4. Add sausage and onion/pepper mixture back into the cast iron skillet. Stir in rosemary and salt and pepper to taste. 
  • 5. Crack four eggs over the mixture. Place skillet in oven and cook for about 10-15 minutes until eggs are set. 
  • 6. Remove from oven and let stand about 2 minutes. Serve and enjoy!
