Cheddar Brats and Beer Soup

  • 1. In a large saucepan, heat the butter over medium heat. Add onion, carrot and shallots, and reduce heat to medium. Cook, stirring frequently, until the onion is very soft (about 10 to 15 minutes).
  • 2. In a separate bowl, whisk broth and flour until smooth. Stir broth and flour into the onion mixture.
  • 3. Add milk, caraway seeds and black pepper. Cook over medium heat, stirring frequently, until the mixture thickens (about 5 minutes).
  • 4. Gradually stir in the cheese; reduce heat to low. Cook, stirring frequently, until cheese melts. Do not bring mixture to boil.
  • 5. Stir in the Klement’s Smoked Cheddar Bratwurst and beer. Cook until heated throughout.
