Cheesy Potato and Cheddar Brat Casserole

  • 1. Boil potatoes until tender. Drain and cool.
  • 2. Preheat oven to 350°F
  • 3. Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts.
  • 4. Cook in a frying pan until cooked throughout (about 10-15 minutes).
  • 5. Place cooked potatoes and smoked sausage in 2 quart casserole, and stir.
  • 6. Combine butter, flour, milk, pasteurized cheese product, salt, and pepper in a saucepan over medium heat, whisking constantly. Heat until smooth and melted throughout.
  • 7. Pour cheese sauce mixture over potatoes and sausage. Sprinkle with shredded cheddar cheese and paprika on top.
  • 8. Place in oven and bake until cheese is golden brown (about 35-45 minutes).
