Sausage and Egg Scrambler

  • 1. Brown sausage in skillet and cut into coin sized pieces
  • 2. In a medium bowl, whisk together eggs and Cajun seasoning.
  • 3. In a large non-stick skillet over medium heat, add olive oil, potato, onion and green pepper. Fry up until tender.
  • 4. Pour eggs over the sausage and vegetable mixture. Fold the mixture until eggs are cooked through.
  • 5. Spinkle Pepper Jack cheese over the egg, sausage and vegetable mixture.
  • 6. Serve and enjoy.
